This week, Red Fire Farm and Deep Root Organic Coop continue to provide us with bountiful harvests of nutritious veggies, like gold beets and organic sunchokes.

We're also excited to begin working with Mousam Valley Mushrooms, one of only a handful of certified organic mushroom growers in all of New England. They've been growing some beautiful oyster mushrooms throughout the winter in a totally controlled environment designed to mimic ideal growing conditions in southern Maine.

Oyster mushrooms are delicate and tender, which means they cook quickly and have a subtle flavor. They also come in a variety of colors, which makes them a fun addition to stir-fries and risottos. Dogma Box and All-Vegetable Box customers will find a mix of oyster mushrooms in their boxes this week, and you can also order them as an add-on for a limited time.

This week's locavore recipe teaches you how to make delicious roasted oyster mushrooms to go over pasta, a salad or as its own side dish. Adding a little butter and organic vegetable broth helps maintain your oyster mushrooms' delicate texture while bringing out their vibrant, natural flavors.
