As the weather warms up, spring is quickly progressing towards summer and our local harvests are becoming more and more flavorful.

Another bunch of organic leafy greens are on their way from Atlas Farm, including arugula, chard and kale. But this week those greens are bolstered by some tasty new ingredients like zucchini and strawberries!

Bok choy, scallions and chives round out the local options this week—from three different farms all located in central Massachusetts. Chives and scallions are both part of the botanical allium family, but their culinary uses vary greatly.

Scallions, especially young fresh scallions like the ones harvested from Atlas Farm this week, impart a stronger flavor than chives. You can also use almost all of the plant, including the white bulb, in your cooking.

Conversely, chives are more subtle in flavor and fortitude, which is why they are commonly used to garnish soups, salads, dressings and roasts. Both scallions and chives inject a powerful freshness into everything they touch, making them a welcome addition to spring cuisine and an important ingredient to source from local organic farms.

The Locavore Recipe of the Week

Zucchini and yellow squash are familiar summer vegetables because they're easy to grow and fun to eat. There are countless different ways to cook them, but this recipe for Marinated Zucchini Salad allows you to turn off the oven and enjoy the raw flavor of these summer squashes.

This salad needs to rest for a few hours before serving, so it's a great recipe to make in advance while you prepare the rest of your meal or enjoy a bottle of wine.

Be sure to cut your zucchini into very thin slices to increase their surface area and promote the absorbtion of the marinade. A mandolin or a French vegetable peeler is a helpful tool, but an extremely sharp knife and a steady hand can work just as well.
