The temperature might be dropping, but our growing partners here in the Northeast show no signs of slowing during the late harvest season. In addition to seasonal roots (carrots, beets and radishes) and Brassicae (kale and cabbage), you'll come across some fun and unique treats, too.

Looking for a way to impress your guests with a meal as fun as a county fair? What better way to eat to a theme than by featuring the beautiful carnival squash?

Organic carnival squash is a hybrid between the acorn and sweet dumpling squashes (though this does not make it a GMO). The result presents itself as a globular gourd with beautiful stripes of gold, orange, white, green and yellow. The flavor of the carnival squash is sweet and mellow, making it a versatile ingredient that can be baked, roasted pureed or steamed. Use it in any recipe that calls for butternut or acorn squash varieties, or in a dish like this smoky, salty and slightly sweet Baked Carnival Squash with Bacon and Rosemary. (Your kitchen is going to smell so, so good.)
