As we transition into the new year, it's a wonderful time for reflection and gratitude. One thing we are grateful for (besides this balmy weather) is that we're still delivering a bounty of organic, colorful produce from right here in the Northeast. In fact, we're delivering produce this week for every color of the rainbow.

Red: The beautiful red beets we're delivering come from Gideon Porth at Atlas Farm.

Orange: The rainbow carrots, also from Atlas, could cover the color spectrum themselves, from orange to purple to yellow.

Yellow: In addition to yellow carrots, we're bringing you crisp, flavorful parsnips from our friends at Red Fire Farm.

Green: Enjoy the versatility of mixed herbs from Doug Coldwell at Happy Valley Organics. Plus the delicious Daikons from Michael Docter at Winter Moon Farm are sometimes green-hued.

Purple: The rutabagas from Blue Ox Farm have a deep purple blush on their tops.

White: In lieu of snow, we're bringing you some other seasonal white stuff. Celeriac from Maple Wind Farm and Hakurei turnips from Winter Moon Farm have flesh as white as can be.

Another treat in boxes this week is sweet potatoes from Atlas Farm. These delicious, nutritious root veggies can be easily prepared in one of founder Jeff Barry's favorite recipes for Sweet Potato Quinoa Back Bean Burgers. (And don't forget you can order quinoa and black beans as add-ons in your next delivery.)
