This weekend we had perfect beach weather – hot in the sun with a just-right cooling breeze. Kick off your shoes, swimsuit-up and get ready for a long summer of sand and surf. Coming home sun-swept at the end of a beach day, we're sure you'll have quite the appetite. Read on for recipes that are the perfect way to top off a beach day, including a twist on a New England favorite.
We love the salt air of the seaside, and can even wax a little nostalgic thinking about the way our skin can feel salty at the close of a long summer's day. Mostly though, all that saltiness makes us pretty thirsty. Wet your whistle with a cool, refreshing glass of blueberry-basil lemonade. The fresh and tangy flavor of berries and lemon are perfectly complemented by the sun-warmed spiciness of fresh basil from Happy Valley Organics in Whatley, MA. You could even bring along a thermos for your beach picnic.
Hotdogs, hamburgers, fish and chips and clam chowder are all popular boardwalk beach fare. If your body is craving some veggies, but you also want the best of a New England tradition, prepare a pot of Clam-Free Chowder. Oyster mushrooms are substituted for shellfish and cauliflower and cashews lend it a satisfying creaminess. You'll spoon it by the cup and the bowl!
