Cubs fans everywhere are learning what it’s like to suddenly be winners after years of heartbreak. It's a good opportunity for us all to bask in the glory of the season, both this historic baseball series, and the delicious local produce season. Crunchy, refreshing bean sprouts from Jonathan’s will be included in boxes this week. These tiny white stalks are the beginnings of Mung bean plants. They have a mild flavor and delightful, watery crunch. Mung bean sprouts' simple appearance—white stems and pale yellow leaves—masks their impressive nutritional value; they are rich in Vitamin K, Vitamin C, iron and potassium.
Bean sprouts make a great addition to any sandwich or soup, especially this simple and cozy 30-Minute Vegetarian Pho. This flavorful recipe is also a great way to highlight one of our newest add-ons: shallots from Deep Root Organic Co-Op. Shallots look like a cross between onion and garlic, with multiple little cloves connected at the base. Their flavor is a bit sweeter than a typical onion, but will still make your eyes water while chopping. For the first time this fall, we will have rutabagas from Deep Root Organic Coop. They are especially popular in Sweden and Norway, and are sometimes called Swedes, or Swedish turnips. Rutabagas are a cross between a cabbage and a turnip, and have yellow or cream-colored flesh and a sweet flavor.
To further draw out this sweetness while celebrating the full bounty of the season, make a batch of Rutabagas with Caramelized Onions and Apples. Or if you really want to embrace this root’s natural sugars, give this Rutabaga Nutmet Cake with Brown Butter Frosting a try. You’ll be exploring a totally new side of this hearty veggie. Sweet!
