Though last week's rain may have kept you inside, the blossoms and buds on the trees didn't seem to mind. The sky was gray, but there is now a beautiful array of color—soft pink, rich magenta, cheery yellow, fresh green—to feast your eyes upon. This week's boxes will feature an array of seasonal colors, especially spring greens and soft oranges, and plenty of tasty veggies to prepare a different kind of feast.
We know that spring has really sprung this week with the arrival of the first New England greens. The bagged spinach included in this week’s boxes is brought to us by Read Miller of Dwight Miller and Son Orchards in Dummerston, Vermont. In the mid-1990s, after an eye-opening trip to rural China, Read decided to switch all 100 acres of his family’s apple orchards to organic production (to learn more about this long-time farm partner, check out our blog). The orchard now produces certified organic apples, maple syrup, apple cider vinegar and spinach, which we are excited to offer this week. This fresh, versatile green is delicious in salads or as a base for brightly flavored recipes, as in this one for Spinach Pesto Fusilli Pasta.
Pea shoots from Jonathan’s Sprouts add another touch of green to this week’s boxes. While mature pea plants can take months to produce fruit, pea shoots are harvested in about two weeks. These little plants are full of sweet pea flavor, and can be used as a complement to other greens in salads, or to add freshness and crunch to sandwiches. Mix them with potatoes in this recipe for Feta and Pea Shoot Fritters for a springtime snack!
Another sure sign of spring is the arrival of stone fruit season. Apricots, peaches and nectarines will all be found in boxes this week. A bite of these delicious golden fruits will put you in mind of the warm sunshiny days in our future. Though closely related, stone fruits all have unique qualities.
