How to make dashi (vegan soup broth)

The simplest dashi is vegan and is essentially just boiling kombu (seaweed) in  hot water. Dashi is delicious soup base for your next homemade ramen, miso soup, cooking liquid for sauces, or a protein marinade! 

More complex dashi recipes might call for bonito flakes (fermented and dried fish, and shaved into flakes), dried mushrooms, toasted soy beans, and more. Here are the steps for a simple vegan dashi!

INGREDIENTS

4 cups water 

1 piece ocean's balance organic whole leaf kombu (~5"x7")

Recipe

  1. Bring water to simmer. Add Kombu. Steep for 5-7 minutes. Note: if you boil kombu, it might result in a bitter flavor.
    1. optional steps: add bonito flakes, dried mushrooms, and other flavoring. Simmer for additional 5 minutes or until mushrooms are hydrated.
  2. Strain mixture of solid parts, and you've got dashi (soup broth).

Seal packet tightly and stored in a dry cool place, kombu will keep for years in the pantry!
