Heiwa (hay-wa; meaning 'peace' in Japanese) Tofu uses soy beans that are organic, non-GMO grown on Maine and New England farms. Soy beans are soaked and ground into a slurry. It is then cooked with water and then squeezed to make soymilk. The soymilk is then curdled into a soy bean curd (aka tofu!). The curd is pressed into slabs of tofu and then cut into the rectangular blocks that you get in deliveries!
